1 Cup All purpose flour
1/2 teaspoon baking soda
1 teaspoon baking powder
3/4 cup Milk
1 Onion bulb chopped in rings
1 can of Corned beef
2 Fresh peppers
Preparation pancakes: Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg into milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone.
Heat a large non stick pan over medium heat, and coat with cooking oil or butter. Pour 1/4 cupfuls of batter onto the pan, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.
Preparation for beef sauce: pour a little cooking oil of choice into pan, add onions, stir, add tomatoes and pepper, go easy on salt or knorr cubes(seasoning of your choice) as corned beef are already salted. Stir for a few minutes and set down.
Servings: Serve with pancakes.
I have been so out of touch lately and everyone has been clamouring for a new food post. so will be dropping more yummy meals for us to try. Ingredients
Freshly rinsed Pumpkin leaf chopped
Smoked Atlantic mackerel fish popularly known as Titus fish in Nigeria (shredded beef or chicken optional)
Dried shrimps/ prawns
3 tomatoes chopped
3 red peppers chopped
Onion sliced in rings
Preparation: place sauce pan on fire, add cooking oil of choice(palm oil), add onion rings, add curry powder(if using vegetable oil), add tomatoes and red peppers and stir till water dries up, add smoked fish and shrimps, add seasoning(knorr cube), stir for a few minutes, add pumpkin leaf taste for salt, add a little and let simmer for 2 minutes and set sauce pan down.
Serving: serve with Rice or boiled yam.

hmm! who here doesn’t love food? lol guess not as much as I do. I enjoy cooking as much as i love eating them. I have a friend and every time I visit her blog, i feel like eating up the site. I don’t eat everything I see, but I love to sample new foods and then try them out myself. sometimes when you follow food blogs, their recipes, sometimes consist of ingredients that you sometimes find difficult to get, reason been that over here in Nigeria, we enjoy eating more of our traditional African food.
so finding the right supermarket to cater for your ingredient list might be difficult. I have heard people say we don’t have enough dishes to choose from, what else do we have? apart from yam, rice, beans, garri(cassava) or plantain. But I disagree. we have a lot of soups, veggies and variety of dishes to choose from. I always love to say “Food is Art”. Even if we have four types of dishes, there are many ways you can spice things up to make it different all the time.
